Feasibility study on mesophillic fermentation of tropical fruit waste into cleaning agents

Acetic acid, colloquially known as a “miracle cleaner”, is a common ingredient found in disinfectants and cleaners for its ability to kill fungus and microbes. It can be extracted from fruits and vegetable waste through bioconversion processes. This paper aims to evaluate the viability of anaerobic fermentation of tropical fruit waste to produce a cleaning agent that possesses acetic acid, using only items found in the typical household. A survey was conducted to determine the ergonomic considerations for the fermentation process. A recycling setup was designed and implemented based on the considerations to ferment the pineapple and durian fruit peels. After a 90-day fermentation period, three experiments were conducted on the recycled samples. Firstly, the samples were tested for their effectiveness in cleaning common household stains. Secondly, a pH test was conducted on the samples to get an approximate sensing on the production of acetic acid from fermentation. Finally, from the two previous experiments, three samples were identified and underwent ion chromatography to gather a detailed analysis of the acetic acid production. Through the experiments, it was determined that the fermentation of a mixture with a water to brown sugar to pineapple peels ratio of 10:3:1 produced a sweet smelling liquid that had a 0.14 mass fraction of acetic acid and could clean coffee and wine stains decently well. When diluted, this liquid can be used as a household cleaning agent.
