Restaurateurs seeking to maximize revenues should look carefully at how long their tables are occupied and how much the average diner spends. This study seeks to find out whether table type (e.g., high seat, bar top table, booth seats, etc) and party size has measurable effects on meal duration and spending, which were combined to compute average spending per minute per person (SPMPP).
